Luchen Kugel

This is the recipe Stacey and her grandmother are discussing. It is from the Rochester, NY, chapter of Hadassah.

Ingredients

  • Kugel
  • 8 ounces cooked, drained egg noodles
  • 8 tablespoons butter
  • 1/2 cup sugar, scant
  • 8 ounces crushed pineapple in juice (do not drain)
  • 3 eggs, lightly beaten
  • 1 cup cottage cheese
  • 1 cup sour cream
  • 1 teaspoon vanilla (Big Mama's secret ingredient)

  • Topping
  • 1 cup crushed corn flakes
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

Cook and drain noodles. Melt butter in noodles. Add remaining kugel ingredients. Cover and refrigerate overnight.

Remove from refrigerator and preheat oven to 350 F. Spread kugel in 9-by-13-inch pan and add topping. Bake for 40 minutes or until lightly browned.
